Oats are a very grounding grain: their heavy quality and naturally sweet taste keep you nourished and satisfied for hours, balancing Vata and Pitta dosha.

These brownies are particularly good to include into your child's lunchbox. Children need slightly more augmenting foods to promote growth and oats' Kapha properties are perfect for that.

Traditionally brownies are baked with stimulating cocoa, which is in this recipe is substituted with a raw carob powder. Fortunately, carob does not agitate the mind and bursts with rich chocolate flavour.

These "brownies" are our family favourite and I hope you enjoy them, too! They are moist, zesty and pleasantly sweet.

Carob and Orange Oat "Brownies"

Equipment

  • Flour mill is useful but optional

Ingredients
  

  • 1 cup oat groats, milled on medium - if you do not have a flour mill, pulse in a powerful blender until the texture is of coarse flour.
  • 1 tbsp coriander seeds - ground into powder
  • zest of half to one orange - depending on your preferences
  • 1 ½ tsp vanilla essence
  • 2 tbsp raw carob powder
  • tsp pink or celtic salt
  • 2 tbsp maple syrup - for those with sweeter tooth, add another tbsp of maple syrup and reduce the water by 1 tbsp
  • 3 tbsp coconut oil - or ghee if the weather is cold
  • 1 cup boiling water

Instructions
 

  • Preheat a fan oven to 180 C / 350 F (200 C / 400 C for a conventional oven).
  • Mix all the ingredients in a bowl together and let the dough rest for 2 minutes.
  • Transfer the mixture into a baking dish making the brownies 1 inch thick.
  • Bake for 15 minutes. Let them cool.
  • Cut into pieces and enjoy.
