Simple Nomato Sauce

Ingredients
1/2
medium beetroot, finely chopped
1
carrot, finely chopped
1
parsnip, peeled and finely chopped
2
tbsp
ghee
2/3
tsp
salt
2
tbsp
chopped coriander
- or other herb
Instructions
In a small saucepan combine all the ingredients, apart from the coriander.
Add water so it reaches to about a third of the vegetables in the pan.
Cover and cook for 15 minutes.
Blend roughly.
Stir in the fresh coriander and enjoy.
