Simple Green Soup
Sometimes simple dishes are surprisingly full of flavour! I made a soup as part of our dinner with green peas with or without parsnip on a few occasions.

Ingredients

Green Peas
fresh or frozen
1-2
Parsnips, peeled
Optional

tbsp
ghee
Spices
1/3
tsp
fenugreek
1
inched
fresh ginger, peeled
grated

curry leaves
fresh or double it if dry
1
tbsp
coriander seeds
or use powder instead
pink salt
to taste
Instructions
Heat ghee in a small saucepan on medium heat.
Add the spices and fry gently till the aroma comes up.
Add the vegetables, salt and water to just cover the ingredients.
Cover with a lid and simmer gently for ten minutes.
Use a hand stick blender to puree the soup.
Adjust the consistency by adding more water, if needed. Heat it through and serve.
Notes
That's it. So delicious! We all loved it. A great option when pressed for time.
