Simple Green Soup
Sometimes simple dishes are surprisingly full of flavour! I made a soup as part of our dinner with green peas with or without parsnip on a few occasions.
Ingredients
- 1 cup Green Peas fresh or frozen
- 1-2 Parsnips, peeled Optional
- 1 tbsp ghee
Spices
- 1/3 tsp fenugreek
- 1 inched fresh ginger, peeled grated
- 8 curry leaves fresh or double it if dry
- 1 tbsp coriander seeds or use powder instead
- pink salt to taste
Instructions
- Heat ghee in a small saucepan on medium heat.
- Add the spices and fry gently till the aroma comes up.
- Add the vegetables, salt and water to just cover the ingredients.
- Cover with a lid and simmer gently for ten minutes.
- Use a hand stick blender to puree the soup.
- Adjust the consistency by adding more water, if needed. Heat it through and serve.
