Simple Green Soup

Sometimes simple dishes are surprisingly full of flavour! I made a soup as part of our dinner with green peas with or without parsnip on a few occasions.
Course Soup
Servings 2

Ingredients
  

  • 1 cup Green Peas fresh or frozen
  • 1-2 Parsnips, peeled Optional
  • 1 tbsp ghee

Spices

  • 1/3 tsp fenugreek
  • 1 inched fresh ginger, peeled grated
  • 8 curry leaves fresh or double it if dry
  • 1 tbsp coriander seeds or use powder instead
  • pink salt to taste

Instructions
 

  • Heat ghee in a small saucepan on medium heat.
  • Add the spices and fry gently till the aroma comes up.
  • Add the vegetables, salt and water to just cover the ingredients.
  • Cover with a lid and simmer gently for ten minutes.
  • Use a hand stick blender to puree the soup.
  • Adjust the consistency by adding more water, if needed. Heat it through and serve.

Notes

That's it. So delicious! We all loved it. A great option when pressed for time.
