As fruit digests much quicker than other foods, it is best to enjoy it away from other meals. A perfect time for it is breakfast. Lightly cooking up to three varieties is easiest on digestion and especially lovely when you feel like a light meal on a warm summer day.
Here is a suggestion recipe for you to try: it is really fragrant and refreshing. However, experiment with seasonal fruits and berries available to you for more flavourful combinations.
Warm Fruit Breakfast Bowl
with Apricots and Strawberries
Ingredients
- 1 tbsp ghee
- 1 pinch salt
- 1 pinch cinnamon
- 1 pinch dried jasmine flowers
- 1 pinch grapefruit zest
- 1 flat peach, de-stoned and quartered
- 3 apricots, de-stoned and quartered
- 6 chopped strawberries
- 2 tbsp water
- dash pure vanilla essence
- 1 tbsp lemon verbena or mint leaves
Instructions
- Heat the ghee in a small pot, add the salt, cinnamon, jasmine and the zest.
- Stir in the fruits, along with the water and vanilla.
- Cover and cook gently for 2-3 minutes.
- Serve with lemon verbena or mint leaves.
