Smooth Quinoa Vegetable Soup

- Electric Pressure Cooker (I use Instant Pot)
Ingredients
- 2 tbsp ghee
- 1 sweet potato, peeled
- 1 cup quinoa, rinsed well
- 3 carrots
- 2 small handfuls kale leaves
- 1/4 tsp turmeric powder
- 1 tbsp coriander seeds
- 1/2 tsp fennel seeds
- 1/2 tsp cumin seeds
- 2 inch fresh ginger, grated
- 2 tsp pink salt
- 6 cups water
- 1 cup parsley
- 1 orange wedge
Instructions
- Heat your pressure cooker to fry the spices in ghee for a minute, or until the aroma comes up.
- Add the rest of the ingredients apart from the orange and the parsley.
- Pressure cook on high for ten minutes. Let the pressure come down naturally.
- Blend the soup till smooth. You can add the parsley before or after you puree it.
- Squeeze the orange wedge to add the juice just before serving.
Notes
Alternatively, this soup can be made on the hob by simmering it gently for 15 minutes covered with a lid.
