sweet potato, peeled

quinoa, rinsed well

carrots

small handfuls
kale leaves

turmeric powder

coriander seeds
1/2
tsp
fennel seeds
1/2
tsp
cumin seeds

inch
fresh ginger, grated
2
tsp
pink salt

cups
water

cup
parsley
1
orange wedge
Instructions
Heat your pressure cooker to fry the spices in ghee for a minute, or until the aroma comes up.
Add the rest of the ingredients apart from the orange and the parsley.
Pressure cook on high for ten minutes. Let the pressure come down naturally.
Blend the soup till smooth. You can add the parsley before or after you puree it.
Squeeze the orange wedge to add the juice just before serving.
Notes
Alternatively, this soup can be made on the hob by simmering it gently for 15 minutes covered with a lid.
