Smooth Quinoa Vegetable Soup

Equipment

  • Electric Pressure Cooker (I use Instant Pot)

Ingredients
  

  • 2 tbsp ghee
  • 1 sweet potato, peeled
  • 1 cup quinoa, rinsed well
  • 3 carrots
  • 2 small handfuls kale leaves
  • 1/4 tsp turmeric powder
  • 1 tbsp coriander seeds
  • 1/2 tsp fennel seeds
  • 1/2 tsp cumin seeds
  • 2 inch fresh ginger, grated
  • 2 tsp pink salt
  • 6 cups water
  • 1 cup parsley
  • 1 orange wedge

Instructions
 

  • Heat your pressure cooker to fry the spices in ghee for a minute, or until the aroma comes up.
  • Add the rest of the ingredients apart from the orange and the parsley.
  • Pressure cook on high for ten minutes. Let the pressure come down naturally.
  • Blend the soup till smooth. You can add the parsley before or after you puree it.
  • Squeeze the orange wedge to add the juice just before serving.

Notes

Alternatively, this soup can be made on the hob by simmering it gently for 15 minutes covered with a lid.
