I have always found parsnips a bit... well, "parsnipy". They were never anything to be excited about. However, after a few recent kitchen experiments, I have discovered that if one cooks them well till very soft, their sweetness amplifies and they transform into creamy goodness when blended.

Let me share with you this simple recipe. It has hardly got any ingredients, but do not let it put you off. Sometimes less is more.

It goes really well with flatbreads, savoury pancakes or as a dip on a side of your meal.


Creamy Sweet Parsnip Mash

3 ingredients only

Servings 4 people

Ingredients
  

  • 3 medium parsnips, peeled and chopped into 1 inch cubes
  • 1 tbsp ghee
  • 2/3 tsp salt

Instructions
 

  • Add the parsnips into a small saucepan, along with the ghee and salt.
  • Add water, enough to reach about 2/3 of the parsnips' height in the pan.
  • As soon as the water comes to boil, cover and cook on low heat for about 15 minutes, until the parsnip chunks are very soft.
  • Using a blender (I used a stick blender), create a very creamy puree.
