Creamy Sweet Parsnip Mash

medium parsnips, peeled and chopped into 1 inch cubes

ghee

salt
Instructions
Add the parsnips into a small saucepan, along with the ghee and salt.
Add water, enough to reach about 2/3 of the parsnips' height in the pan.
As soon as the water comes to boil, cover and cook on low heat for about 15 minutes, until the parsnip chunks are very soft.
Using a blender (I used a stick blender), create a very creamy puree.
