Sunny Chapatis

Equipment

Ingredients
  

  • 1 1/2 cup white basmati rice flour - I milled 1 cup of rice into fine flour
  • 2 medium carrots
  • 1 cup boiling water
  • 1/2 tsp salt
  • 1 tsp ghee

Instructions
 

Method 1

  • Cook the carrots in some water under a lid for about 15 mins or until very soft to mash.
  • Using a masher, press the carrots into a smooth puree.
  • Mix the carrots with one cup of boiling water and make chapatis following my standard Rice Flatbread recipe (link in the notes).

Method 2

  • Alternatively, blend chopped carrots with the water till smooth in a blender. Then heat it in a pan till boiling. (Add a splash of water to account for the evaporation.)
  • Now follow the Rice Flatbread recipe.
