Zesty Cream Cheese Dip

Ingredients
  

  • 2/3 cup fresh ricotta cheese - homemade is best
  • 1 tbsp creme fraiche
  • 2/3 cup water
  • 2 tsp olive oil, coconut oil or ghee
  • 1 tsp fresh rosemary or 1/3 tsp dry
  • 1/2 tsp salt
  • 1 tsp arrowroot flour - mixed in 2 tsp water
  • 2 tbsp chopped fennel fronds or dill
  • 1 tsp grapefruit zest
  • 1/2 tsp nigella seeds, fried in a little oil for 1 minute - optional topping

Instructions
 

  • Blend the cheese, creme fraiche and water in a blender.
  • Gently sauté rosemary in oil, stir in the salt.
  • Mix in the blended cheese.
  • Whisk in the arrowroot flour mixed with a little water. Heat the mixture through.
  • Stir in the chopped herbs.
  • Add in the zest and the optional seeds and enjoy.
